Smoked Pastrami
Turn a store bought brined corned beef brisket into a gorgeous smoked pastrami.
Here’s the recipe I follow, but it basically goes like this:
1. Soak the corned beef in a giant pot of water, in the fridge, for 8 hours to get the salt water out of it.
2. Rinse the corned beef, then cover it liberally with this rub recipe.
3. Smoke at 225° until internal temp reaches 200° (it’s gonna take like 12 hours)
