Learning Enchiladas
First attempt was on 10/29/20
I combined 3 different recipes for this. As is standard whenever I attempt a new recipe, I try to follow the highest rated google result with the most reviews. In this case, it was this one:
The nice thing with this recipe is it also links to a homemade Enchilada Sauce recipe:
I wasn’t happy with the chicken solution in the first recipe, so then I found a recipe to make shredded “Mexican” chicken in the instant pot:
Things I changed from the above recipes:
- I used beer (stella) instead of water in the in the shredded chicken recipe.
- The enchilada sauce didn’t quite make enough for the recipe. I would double it, and add some tomato sauce next time, maybe some beer also. Maybe even explore different sauce recipes…
- More cheese. I went through a whole block of monterrey jack, next time I would also use a block of cheddar in combination.
